Omg, it truly has been awhile since I even logged on, but I will finally have a few updates to post in the next few days. It has been a crazy few months in my life and I am finally getting everything together. Hopefully everyone out there will like the stuff that I have been working on.

When I get bored, I like to try and create some new cupcake ideas from existing items that I love. This time I decided to try Strawberry Lemonade. I drink it all the time and I figured it couldn't be that tricky to make a great tasting cupcake with those flavors. I started off with a basic lemon cake recipe and added in some fresh cut strawberries and a little more lemon zest to get the flavor just right. Then I worked on the buttercream. I wanted it to taste like a strawberry buttercream with a finishing bite. Since my cupcake had such great lemon flavor the buttercream really had to bring in the strawberry flavor. After throwing out around 3 batches of failed buttercream, I finally had success. The It took a lot of work to make these, but the results were very tasty. Strawberry Lemonade Cupcakes are a winner.

Our little buddy Ryson wanted toy have a Toy Story theme for his 4th birthday party. So I went ahead and created him some custom cupcakes for his big day.

His cupcake display complete with a 9 inch round cake cake on top. Round cake is a Chocolate and Vanilla cake with Vanilla Buttercream.

The Alien cupcakes are Blue Velvet with Cream Cheese frosting. The alien is made up of a sugar cookie, royal icing & sour gummy straws.

The second cupcake is a Buttermilk cupcake topped with a Vanilla Buttercream. It has a custom made flag to finish it off.

This is the cross section view of the 9 inch round cake.

I love banana cupcakes... So when presented with the opportunity to create a chocolate and banana cupcake I got really excited. After some trial and error I came up with 2 versions of this style of cupcake. Both were equally delicious.

Basic banana cake

Filled with chocolate pudding

Finally finished off with Whipped Cream, toasted walnuts and melted milk chocolate. This on I called the "Chocolate Dipped Banana Cupcake".

The second version started with the basic banana cake, then it was topped with dark chocolate ganache and fresh cut bananas

Finally, it was finished off with whipped cream, more ganache & toasted walnuts. I call this one the "Banana Royale Cupcake".

For daughters last day of summer school, I decided to make some fun cupcakes for all the hard working girls. The theme for summer school was the ocean, so I went ahead and made them some goldfish cupcakes. Cupcakes are vanilla with vanilla buttercream. Fish are made from circus peanuts, mini chocolate chips and apple jacks cereal.

The last time I made my Peanut Butter & Chocolate Swirl cupcakes, I wasn't really satisfied with the overall look & taste. I'm a huge peanut butter fan and I think that the first attempt at making these cupcakes failed because you could not really taste a lot of peanut butter. So, I went back into the kitchen and came up with something that now taste more like a Reeses Peanut Butter cup.
